Cuban food is rich in flavors as well as culture. It is a constant reminder of my Cuban heritage and the country my grandparents and parents left in 1961. Miami culture is as diverse as the United States as a whole. It is a mixture of Latin-American, and the Carribbean, and good old Southern tradition, and the dishes I was raised with and was served growing up reflect these qualities.
The book I am writing introduces the rich and varied cuisines of my childhood and a translation of my mothers Cuban cookbook that was nearly destroyed in a fire.
How to use the book
The dishes represented in the book is my families everyday cooking. It will not contain every dish I know that is Cuban but the most special ones I remember growing up from each category — appetizers and snacks, soups and stews, meats and poultry, fish, rice and beans, eggs and salads, and desserts and drinks from Miami.
I will make this book simple yet enlightening….
